- Make a caramel. At 116°C take out of the heat and pour over the pecans
- Wait until it sets and process in a robot coupe until a very smooth praline paste is obtained.

Preparation: Texas Pecan Praline Part B
- Melt cocoa butter and chocolate. Mix until fully incorporated.
- Add the Texas Pecan Praline and mix until combined.
- Then add the carbonated candy pouring over any silicone-shaped mold you like.
